Serves 6
Preparation time: 5 min
Cooking time: 15 min
250 ml (1 c) flour
5 ml (1t) paprika
2 ml (½ t) cayenne pepper
salt and pepper
18 chicken wings
oil for deep-frying












 SAUCE

50 g butter
9 jalapeƱo chillies, sliced
10 ml (2 t) Cajun spice
2, 5 ml (½ t) chilli flakes
375 ml (1 ½ c) sweet chilli sauce
125 ml (½ c) water
1.    In a bowl mix the flour, paprika, cayenne pepper, salt and pepper. Dust the chicken wings with the flour mixture and set aside.
2.    Heat enough oil in a deep pot to cover the wings until hot. Drop the wings into the oil and cook for 10 minutes or until browned. Remove with a slotted spoon.
3.    Sauce: In a pan over medium heat melt half the butter, add the chillies, spice and chilli flakes and cook for 2 minutes. Pour in the sweet chilli sauce and water and simmer over low heat for 10 minutes.
4.    Serve the chicken wings with the sauce on the side for dipping.
